Recipes for your Bachelor Viewing Party

Meatballs, Kale Salad, Banana Almond Cookies, & Spiked Hot Apple Cider

 

Did you all survive last weeks Bachelor “double header”? It was pretty intense when it came to Tierra… or as I’ve heard other people call her, “Tierrable.” I’ve already said it on twitter, but when it came to the Polar Plunge, I didn’t have any sympathy for her as she was in hysterics. Sorry. Just being real. I haven’t ever been in that cold of water before, so I can’t imagine the shock and pain that would hit your body, but all of the other girls were fine. Hmmm…and did you notice Tierra kept throwing off the towels, robes, and heat blankets. Ugh. (Scratching my head.) Other than that, the Polar Plunge looked like quite the adventure. I think I might do it if I had the opportunity. It seems like one of those “once in a lifetime” moments that you just couldn’t pass up!

I know Tierra is getting ripped into shreds and I really hope that she’s a cool girl apart from what we’re seeing on TV. You have to remember that when the footage hits the editing room there is a lot left out (or you’d be watching the show for days/months), so some personalities may be cut short. I do personally believe however, that what you say and do on camera is you, even if there’s another side to the story missing. So future contestants, think about this- go on the show being You, but know if you’re going to act out in disrespectful or unkind ways, the camera will catch it and editors won’t ditch it. ;)

Catherine is now officially on my radar! I loved the easy connection that Sean and Catherine had with one another. It was playful and flirtatious and you could tell they were smitten with each other. Question is, can it go deeper? I still have a few other favorites, but now I will be watching the way Sean and Catherine interact a lot closer than I had been.

Another moment that I remember from last week that I wanted to mention was AshLee & Sean’s time together at the Rose Ceremony with the blindfold. I know many might think it was super cheesy, but I thought it was romantic. I think it was a moment for AshLee that she will remember forever. I think this moment stuck out to me because I had experienced some personal growth when I was on the Bachelor. I know, strange place for that… but the time I had while filming I was able to overcome a lot within me, and I think AshLee is experiencing some of her own breakthroughs. I don’t think this is something that every contestant gets to experience especially when in this type of environment, but I can say I will forever be grateful for that unique opportunity that I had.

By this point of the show it is always hard to see the ladies go. I’m really starting to like all of the girls for different reasons, but it’s time to start looking at them in the way of who is BEST for Sean? I love watching the “love story” unfold from here on out.

Gluten Free Turkey Meatballs

 

Inspired by What’s That Smell

These meatballs are fairly easy to make and make for a great appetizer or meal, depending how hungry you or your guests are. A perfect and tasty side of protein to go with the rest of the menu this week.  Just poke a toothpick into each one so that they’re easy to grab!

This originally recipe called for Grass Fed Ground Beef, but I prefer organic ground turkey. Use what you like, the ingredients are the same besides that!

ingredients:

-1 lb organic ground Turkey (white meat is my preference) *Original recipe calls for 1 lb Grass Fed Ground Beef, but I prefer turkey

-1 egg

-1 tbsp coconut oil

-2 tbsp coconut flour

-½ teaspoon black pepper

-1 small onion finely chopped or 2 tbsp minced onion- I prefer the fresh onion

-1 tbsp paprika

-½ tsp cinnamon

-2 tbsp dried parsley

-1½ tbsp dried cilantro

*Original recipe recommends ⅛ – ¼ teaspoon cayenne pepper for an extra kick! (I didn’t try this, so you’ll have to tell me!)

directions:

-Preheat oven to 425 degrees F

-Saute chopped onions in a pan with coconut oil for 1-2 minutes

-In a medium bowl combine the ground turkey with all of the spices until completely mixed. I used my hands for this.

-Whisk egg in a separate bowl and then mix into the turkey/spice mixture.

-Then add the sautéed onions to the mixture

-Combine everything thoroughly (again, with hands works best)

-Grease a cookie sheet or casserole dish with grapeseed oil or coconut oil. You can also use the spray of either of these oils if it’s easier.

-Roll turkey mixture into balls depending upon the size you prefer and place in dish or on pan

-Bake for around 25-30 minutes until thoroughly cooked

Meatballs on toothpicks always seem to be a hit (for the meat eaters) at parties, I was excited to make a Gluten Free one.

Obviously this isn’t a vegan/vegetarian friendly option, but that’s why the salad next up on the menu is loaded with good stuff!

Hearty Kale Salad

One of my absolute favorite salads is from Veggie Grill, I crave it all the time, so I did my best to recreate in the most simple way. Hope you like it!

ingredients:

-Approximately 3 Big Bunches of Kale

-Splash of olive Oil

-Juice of 1 lemon

-2 Cups of Cooked Quinoa

-2 diced Roma Tomatoes

-1 cup chopped Red Onion

-1 Cup of Corn (I used half of a can)

-1 Carrot shredded

-1 Cup shredded Cabbage

-1 Cup of Walnuts (You can add more if you like)

 

directions:

-Before you begin throwing your salad together, cook your quinoa

-Remove the stems/spines from Kale, rinse and dry, and break into smaller pieces

-Place Kale in a large bowl and add the splash of olive oil and juice of a lemon and massage into kale with your hands

-Add all other ingredients and toss well

*I used a Gluten Free Papaya Seed Dressing that I found, because that tasted the most like Veggie Grill’s salad, but you can easily just add some more lemon juice and fresh ground pepper & sea salt and that would be a healthy dressing and taste really zesty! Remember, if you’re serving this to allergy sensitive people, like gluten free or dairy free, make sure you check your store bought dressings before serving, I always live the dressing on the side so people can read the ingredients and use the amount that is good for them.

This Kale salad is full of nutrients that will give your whole body a boost!

Almond Butter Banana Cookies

Recipe Inspired by Cavegirl Cuisine

I’ve been avoiding Peanut Butter these days, seems to be another allergy of mine, so I’ve been looking to bake more with Almond Butter. Why not? It’s smooth, creamy, nutty… I love it! I had been trying to come up with a cookie recipe using almond butter, but I ended up googling and I found this recipe and I had to try it! Once I did, I had to share. These cookies aren’t your normal cookie flavor or texture, they are more cakey and are kind of like eating mini bites of banana bread. Yum!

ingredients:

-3/4 cup creamy unsalted almond butter

-1/3 cup raw honey

-1/4 cup coconut flour

-1/4 cup + 2T almond meal

-2 Organic bananas (If they’re really big, just use 1)

-1 tsp baking powder

-1 egg

directions:

-Preheat oven to 350 degrees

-Mix all ingredients together in a medium size bowl. Mix thoroughly.

-Use coconut oil to grease cookie sheet or line with parchment paper.

- Drop small a spoonful of cookie dough on the cookie sheet leaving about 1-inch between cookies. I used my cookie scoop/melon baller!

-Bake for 12 minutes until the edges start to brown.

-Let cool for about 30 minutes before you dive in!

Pair this dessert with a warm dessert like drink like the Hot Apple Cider below…

A Hot Beverage…

 

Spiked Hot Apple Cider

It’s been pretty chilly here in California, an extra long winter it seems, and I know everyone on the East Coast has been under lots of snow this week, so I thought something hot would be perfect!

*If you’re not of drinking age or don’t care for alcoholic beverages omit the rum :)

ingredients:

-5 Cups of Organic Apple Juice

-1/2 Tsp of Cinnamon

-1/3 tsp of nutmeg

-3 ounces of Spiced Rum (Remember, this is optional)

*Cinnamon Sticks to Garnish

*this makes only 2-3 servings, so double or triple it if you have several guests

directions:

-Place Apple Juice, Spices, and Rum (if using) in a Pot on the stove over low/medium heat

-Stir often so spices will blend

-Once it is hot pour into mugs and if you’d like, garnish with a Cinnamon Stick (I love the added  taste)

*Make sure you use glasses/mugs meant for hot beverages! I made the mistake of pouring into a nice glass that was too thin for something hot! OOPS!

*Use a ladle for serving if you have several guests, they can serve themselves.

Enjoy this hot beverage with a almond banana cookie! Stay warm and enjoy the show! I can’t wait to see what goes down this week.
